Purpose: Creating and maintaining relationships with clients and guests, with a strong passion to elevate one’s dining experience. This person must be a true leader with a strong attention to detail and the power and ability to the manage dining room, the lounge and in room dining departments. Act as a liaison between the chef and the guests to provide a truly wonderful and memorable experience that is profitable for both the guests and the owner.


Essential Functions:

  • Hiring: conduct interviews, check references, under Ethan Allen Hotel/21 Lake guidelines and practices. Complete orientation checklist.
  • Scheduling: complete schedules and forecasting for 21 Lake Restaurant and Bar, according to volume and submit to F&B Director.
  • Training: creating and maintaining an approved training program with a strong attention to detail around product knowledge, proper service techniques, up-selling, cocktail recipes and in room dining protocols.
  • Staff Management: all 21 Lake staff i.e.; proper uniforms pressed and clean, timeliness, etc. Follow Ethan Allen Hotel/21 Lake guidelines for disciplinary procedures
  • Cleanliness and Organization: maintain cleanliness in the dining room, prep areas, server station, host station, all beverage areas (including office, storage rooms and kitchen) at all times
  • Beverage Management: Ordering and Receiving all beverages, creation of specials and drink lists in collaboration with the Director of Food and Beverage, monitoring bartenders for adherence to proper pouring and service techniques, organization and monthly inventory
  • Pre-meal: Develop and maintain guidelines/topics to discuss daily. Use as a time to educate, discuss issues, talk about guests, feedback, food& wine. Create log books.
  • Web-site/social media: Manage web-site content in collaboration with Director of Food and Beverage. Update/monitor all social media platforms with specials, news, events, etc…in a timely fashion to maximize visibility and profits. Respond to all inquiries and guest comments in a timely manner.
  • Reservation log: maintain and update as needed. Write any guest feedback or comments down for future reference. Monitor online and website reservation platforms daily.
  • Point of Sale System (Micros): update and maintain pricing, make adjustments when necessary, enter specials daily, maintain counts, 86’s.
  • Conduct weekly one on one’s with the Director of Food & Beverage to discuss all items pertaining to the operation of 21 Lake
  • Serve-Safe and TIPs (or some form of safe food handling and alcohol awareness certifications) Certifications required. If you don’t have, you must have the ability within your first 30 days to complete those courses.
  • Strong cash handling and closing experience
  • Audit all F&B banks with Accounting Manager monthly.
  • Act as MOD as needed

Job Requirements

Hotel Specific Essential Functions:

  • Ability to stand for 8 to 10 hrs. length of time
  • Ability to lift 50 lbs.
  • Ability to bend frequently during a shift
  • Ability to read, write, understand and speak English
  • Ability to hear and verbally communicate to all customer requests.
  • Flexibility to step into whatever role is needed at the time in order to deliver exceptional customer service. This may include taking on job responsibilities outside of this job description and may require assisting other departments in their regular functions.
  • Ability to read and understanding P&L/budgetary responsibilities.
  • Ability to comply with all hotels policy and procedures.
  • Willingness to work weekends, holidays, and/or flexible hours
  • Comply with hotel/21 Lake policy regarding attendance and attire

Technology and Equipment:  

  • Strong knowledge of Micros, Microsoft Excel and Word, payroll systems

Working Environment:

  • 21 Lake Restaurant is an approximately 130 seat and a 55 seat Bar
  • Hotel property with approximately 200 guest rooms
  • Work will primarily take place at Dining Room, Function Rooms, Kitchen
  • Group and solo work
  • Practice and observe all safety procedures
  • Interior of hotel, in all areas with exposure to extreme temperatures.
  • Exterior of hotel with exposure to weather conditions.
  • Exposure to various hazardous chemicals
